Pasta Salad



This is an easy to make tangy dish. You can use the dressing with just about anything.

Ingredients
1 Box of Whole Wheat Pasta (I used rotini.)
2 Shallots, Chopped
4 Tablespoons of Red Wine Vinegar
4 Cloves of Garlic, Minced
2 Tablespoons of Dijon
1/2 Cup of Olive Oil
4 Tablespoons of Capers, Chopped
4 Tablespoons of Gherkin Pickles, Chopped (I used the regular dill pickles, but with all the tangy ingredients in this dressing, the sweet gherkins might have given a good counter to the tanginess.)
4 Scallions, Chopped
Pinch of Salt and Pepper

Directions
Cook the pasta according to directions
Combine all the ingredients and toss with the cooked pasta
Eat hot or cold
