Asian Baked Tofu with Roasted Sweet Potatoes
I am not much of a fan of plain tofu, but a marinated tofu absorbs the flavors of the marinade. And this Asian marinade combines a lot of great flavors.
Marinade
2 Tablespoons of Rice Vinegar
2 Tablespoons of Sesame Oil
3 Tablespoons of Soy Sauce
2 Teaspoon of Agave
2 Tablespoons of Ginger
2 Tablespoons of Garlic Powder
1/2 Cup of Chopped Scallions
1 Teaspoon of Cumin
1 Teaspoon of Coriander
Black Pepper to Taste
Tofu
Drain the tofu and let marinate for at least one hour
Preheat the oven to 450 degrees Fahrenheit
Bake tofu for 30 minutes, flipping after 15 minutes
Sweet Potatoes
Preheat the oven to 450 degrees Fahrenheit
Slice potatoes, drizzle with olive oil and salt and pepper, and roast for 30 minutes
