Curried Chickpeas and Vegetables
A lot of great flavors in this dish. A lot of spice in this dish as well, so proceed accordingly.
Ingredients
1 Cup of Dried Chickpeas, Soaked Overnight
1 Onion, Chopped
Mixed Vegetables
1 Box of Pomi Chopped Tomatoes
3 1/2 Cups of Vegetable Broth
4 Teaspoons of Curry Powder
2 Teaspoons of Coriander
2 Teaspoons of Turmeric
2 Teaspoons of Garam Masala
3 Teaspoons of Ground Red Pepper
Directions
Cook the chickpeas in 3 cups of vegetable broth for about 30 minutes
Saute the onion 4-6 minutes
Add the chickpeas, tomatoes, mixed vegetables, and 1/2 cup of vegetable broth
Stir in seasonings and let simmer for 10 minutes
