Avocado Fries and Green Bean Fries




Avocados may just be the greatest piece food in existence. Some people call it a super food, but I call it super delicious and super versatile. I used to think avocados were only used to make guacamole, but I have discovered many, many ways to cook and eat avocado. This is recipe is a healthy junk food recipe. I liked it so much I tried it out a few days later with green beans.

Ingredients

3 Firm Avocados, Sliced
1/2 Cup Flour
2 Tablespoons Dijon Mustard
2 Tablespoons Agave (Or Maple Syrup)
1 Tablespoon Soy Sauce
1 1/2 Cups Panko Bread Crumbs
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1 Teaspoon Paprika
Salt and pepper

Directions

Preheat the oven to 450
Mix the flour, mustard, agave, and soy sauce together in a shallow bowl. Add just enough water to make the mixture paste like
Combine the bread crumbs, onion powder, garlic powder, paprika, salt, and pepper in another shallow bowl
Dip each avacado slice in the flour mixture then the bread crumbs and placed on a baking sheet.
Spray each "fry" with cooking spray and bake for 20-25 minutes, turning each halfway

For the green beans do the same as above, only cook the beans for few minutes before coating. Either steam them for 2-3 minutes or blanch them in boiling water for 2-3 minutes then drain and place in ice water to stop cooking. Once the beans are cool to the touch, coat them and bake them.
