Slow Cooked Red Beans and Rice



I have re-discovered the fun of cooking with a crockpot. I just threw these things together with delicious results.

Ingredients
2 Cups of Dried Red Beans (I did not soak them.)
1 Cup of Jasmine Rice
1 Box of Pomi Chopped Tomatoes
4 Cups of Water
1 Shallot, Diced
4 Cloves of Garlic, Minced
2 Tablespoons of Creole Seasoning
2 Tablespoons of Paprika
1 Tablespoon of Cumin
1 Teaspoon of Salt

Directions
Place all ingredients in a crockpot. Cook on high for 3-3 1/2 hours.
