Romesco Sauce



This is a rustic, satisfying sauce. I have heard it called "Mediterranean ketchup." It goes great with grilled or roasted foods. I put some over roasted red potatoes. (See picture below.) This sauce also goes great on veggie burgers.


Ingredients
16 Ounce Jar Roasted Peppers
1/3 Cup Pine Nuts (Almonds would work fine as well)
3 Cloves Garlic
1 Tablespoon Paprika
1 Teaspoon Cayenne
2 Tablespoons Tomato Paste
2 Slices Bread
1/3 Cup Olive Oil
3 T Balsamic Vinegar
1/2 Lemon Juice
Salt to Taste

Directions
Add the peppers, nuts, garlic, paprika, cayenne, tomato paste, and bread to a blender and blend until creamy.
Pour in the olive oil, vinegar, lemon juice, and salt; blend until smooth
