Stuffed Shells
I have a permanent craving for Italian food, and I will use any excuse to make some marinara. This dish is flavorful and filling.
Ingredients
Marinara Sauce
1 Package of Jumbo Shells
14 Ounces of Extra Firm Tofu, Drained
1 Tablespoon of Olive Oil
1 Tablespoon of Lemon Juice
2 Tablespoons of Dried Basil
2 Tablespoons of Dried Parsley
1 Tablespoon of Dried Oregano
1/2 Teaspoon of Garlic Powder
Directions
Make the marinara
Drain the tofu
Preheat oven to 400 degrees Fahrenheit
Cook shells al dente according to package directions; drain and let cool to touch
Crumble the tofu in a large mixing bowl and combine with the oil, juice, basil, parsley, oregano, and garlic powder
Stuff each shell with the tofu mixture, place in baking pan, top with marinara, and cover with foil
Bake for 30 minutes
