Sweet Potato Pudding



This is great tasting and sweet, and as far as desserts go not all that bad for you.

Ingredients
2-3 Sweet Potatoes, Peeled and Diced
3 Cups Almond Milk
1/2 Cup Sugar

Directions
Add the sweet potatoes and 2.5 cups of milk to a large pot and cook over medium heat until the potatoes are soft
Remove from heat, mash the potatoes, and add in the sugar and remaining milk
Return to heat and cook until the pudding thickens

Note: Next time I might add some allspice and cinnamon. This dessert can be served warm or cold. After being refrigerated it becomes thicker.
