Orzo Salad




Orzo is one of my favorite pastas. I especially like to cook it with green beans or other vegetables. This is a hybrid of a macaroni salad and a pilaf.

Ingredients
1/2 Package 8 Ounces) Orzo Pasta
1/2 Red Onion, Diced
1 Bell Pepper, Diced
2 Medium Tomatoes, Diced
2 Tablespoons Kalamata Olives, Pitted and Chopped
Fresh Basil, Chopped
Cavender's Greek Seasoning, To Taste

Directions
Cook the orzo al dente according to package directions; drain the pasta, rinse with cold water, and toss in olive oil.
Chop and dice all ingredients and add to cooled pasta. Adjust ingredients according to taste.
Serve chilled.
