Veggies n' Dumplings
An alternative to chicken n' dumplings and a good soup for cool fall and winter nights.
Ingredients
1 Medium Onion, Diced
2-3 Carrots, Diced
2-3 Celery Ribs, Diced
1/2 Cup of Green Beans
1/2 Cup of Frozen Corn
1/2 Cup of Frozen Peas
1/2 teaspoon Thyme
Salt & Pepper to Taste
1 Cup of Flour
4 Cups of Vegetable Broth
Fresh Dill
2 Teaspoons Baking Powder
1/2 Cup Almond Milk
Directions
In a large pot saute the onion for 3-5 minutes
Add the carrots and celery and saute for another 3-5 minutes; season with salt & pepper
Mix in 1/4 Cup of flour and pour in the vegetable broth; add the green beans, corn, peas, and thyme; bring to a boil
Reduce heat and simmer soup for 10-15 minutes
To make the dumplings combine 3/4 Cup of flour, dill, baking powder, and 1/2 teaspoon of salt; add the milk to make a thick batter
Spoon into the pot and simmer for another 20 minutes
