Black Bean Dip



This is a pretty simple warm dip. You can serve it with fresh vegetables or bread. Good for get-togethers at home or work.

Ingredients
1 15 Ounce Can Black Beans
1 Medium Onion, Diced
1 Shallot, Diced
3 Cloves Garlic, Chopped
2 Tablespoons Tomato Paste
2 Serrano Peppers, Chopped
2-3 Portobello Mushrooms, Chopped
1/4 Cup Parsley, Chopped
1/4 Cup Cilantro, Chopped

Directions
Saute Garlic for 30 seconds to 1 minute
Add onion and shallot and continue to cook for 3-5 minutes
Stir in tomato paste, peppers, and mushrooms; cook until paste turns brick red
Mix in beans, parsley, and cilantro; cook until warm throughout
Transfer to food processor and chop; blend in olive oil to make smooth
