Mojo Tofu Tacos



I got this idea from watching the movie "Chef." Mojo is a great citrus marinade that has so many Latin flavors. Remember to reserve some of the marinade to use as a sauce for the tacos. I made refried beans and rice with this dish.

Ingredients

Tacos
Corn Tortillas
1 Block of Tofu, Drained
1 Tomato, Diced and Seeded
Shredded Cabbage
Guacamole

Marinade
1 1/2 Cups Orange Juice
1/2 Cup Lemon Juice
1/2 Cup Lime Juice
1/2 Cup Oregano, Chopped (Fresh)
1/3 Cup Oil
10 Cloves Garlic
3 Jalapenos, Sliced
1 1/2 Teaspoon Salt

Rice
1 Cup Jasmine Rice
2 Cups Water
2 Cloves Garlic
1/4 Cup Cilantro, Chopped (Fresh)
Salt and Pepper to Taste

Refried Beans
1 Can Pinto Beans, Drained (Yes, I used canned beans. They are much softer and easier to work with in dish like this.)
1 Small Onion, Diced
2 Cloves Garlic
1 Teaspoon Chipotle Chili Powder
Salt and Pepper to Taste (The beans I used had no salt, but a lot of canned beans are loaded with salt so be careful when seasoning.)

Directions

Tofu Marinade
Mix all the marinade ingredients until blended well. Reserve a 1/2 cup of marinade to use later as a sauce.
Place the block of drained tofu in a bowl and cover with marinade. Cover the bowl and let sit refrigerated for up to 8 hours.
Preheat oven to 350 degrees Fahrenheit.
Bake the tofu as a block for 20 minutes on each side.

Rice
In a pot saute the garlic for 30 seconds to a minute. Add in the rice and saute for another minute. Add in the in the cilantro and water. Bring to a boil, reduce heat, and cover. Cook for about 20 minutes or until water is drained. Top with chopped cilantro and a squeeze of lime juice when serving.

Refried Beans
Drain the can of beans (reserve the liquid) and place them in a food processor along with the chili powder and salt and pepper. It is fine if a little liquid makes into the processor. Chop beans until they are mostly smooth. Add some of the liquid if the mixture is too dry.
In a pan saute the garlic for 30 seconds to a minute. Add the onion and saute for another 3 - 5 minutes. Then add the bean mixture and cook until heated through.

Tacos
To make the tacos warm a tortilla and spread guacamole in the center. In a small bowl mix the cabbage, tomatoes, and some of the reserved marinade. Place several small slices of tofu on the tortilla and top with the cabbage mixture.
