My post on
pancakes got me to thinking more about breakfast food. Breakfast can be tough, especially if you are a vegan. This is one variation of a delicious and nutritious breakfast.
Bread, hummus, avocado, and tomato. I also like avocado sprinkled with red pepper flakes and drizzled with lemon juice. Not your typical breakfast food, but a great option to get your day started right.
