Black Eyed Peas, Collard Greens, Steamed Vegetables, and Rice



Another simple vegetable dish with down home Southern flavor.

Ingredients
1 Cup Rice
1 Cup Dried Black Eyed Peas, Soaked Overnight
2 1/2 Cups of Collard Greens
Various Vegetables for Steaming
3-5 Cups of Vegetable Broth

Directions
Cook rice according to package directions. Use vegetable in place of water for extra flavor.
Place soaked peas and 3 cups of vegetable broth in a pot; bring to a boil
Once the peas are boiling decrease the heat and partially cover the pot with a lid; cook for about 30 minutes or until the peas are tender
Place collard greens in a large pot and cover with water; bring to a boil and cook for 10 minutes
Drain half of the water, add seasoning (I used 2 tablespoons of Zatarain's Creole Seasoning.), and cook for another 20 minutes or until the greens are tender
Steam the vegetables via your favorite method
Plate and enjoy
