Broiled Tomatoes



As a kid I hated tomatoes. In fact, I only started to eat them a few years ago, and ever since then I have been looking for ways to cook tomatoes. This is a pretty simple and easy dish that can be used as an appetizer, side dish, or snack.

Slice several tomatoes (I recommend semi-thick slices.) Drizzle olive oil on the tops of the tomatoes and add some spices like salt, pepper, dried basil, oregano, garlic, and parsley (whatever floats your boat). Place the tomatoes spiced-side up on a pan and broil for about three minutes.

Tip: splash with a little balsamic vinegar when the tomatoes are hot and fresh from the oven.
