Stuffed Peppers
I love stuffed peppers. I have no idea what it is about such a simple dish. You can really prepare stuffed peppers almost any way you like. These peppers are stuffed with quinoa, pinto beans, and cilantro. This recipe is from 1,000 Vegan Recipes by Robin Robertson.
Ingredients
1 Cup of quinoa
4 Bell Peppers, tops removed, and seeded
1/2 Cup of red onion, minced
1 Clove of garlic, minced
8 Ounces of dried pinto beans, soaked overnight, cooked, and drained
3 Tablepoons of cilantro
salt and pepper to taste
Directions
Preheat oven to 350
Cook quinoa according to package directions
Blanche the peppers in boiling water for 4 minutes
Chop the pepper tops
Saute the onion and pepper for about 5 minutes.
Add in the garlic and cook for about 30 seconds
Add in the quinoa, beans, cilantro, and salt and pepper
Add mixture to the peppers. Place peppers in baking pan, add 1/2 Cup of water to pan, cover with foil, and bake for 45 minutes.
