Red Beans and Rice



I love beans and rice. Separate they are delicious, but together they form a potently delectable combo. These beans take a long time to cook, but, trust me, they are worth every second of the effort.

Ingredients
2 Cups of red beans, soaked overnight
4 Cups of vegetable broth
1Cup of water
1 large onion, diced
6 Cloves of garlic
1 1/2 Cups of tomatoes, crushed
Hot sauce to taste
1 Teaspoon of salt
4 Bay leaves
1 Tablespoon of brown sugar
2 Cups of cilantro, chopped

Directions
Cook rice separately
Pre-heat oven to 350 Fahrenheit
In a heavy saucepan you can use in the oven saute the onions and garlic until onions start to brown
Add the tomatoes, hot sauce, salt, bay leaves, brown sugar, vegetable broth, and the water
Bring to a boil and let simmer for 10 minutes
Add beans, stir, cover, and place in oven
Let cook for 3 hours
Right before serving add the cilantro and salt and/or hot sauce to taste
